Level 5 is the highest finish in the industry standard, and most contractors won't quote it because it's slow, expensive in materials, and unforgiving — any high spot will show. We do it regularly because our taping is already tight enough to build on.
The skim coat is rolled on, knocked down with a blade, allowed to dry, then sanded perfectly flat. Done right, the wall is uniform end-to-end with no telegraphing of tape lines, screw heads, or butt joints.
If you're investing in designer paint, a feature wall, or a space with big windows that will throw side light across the surface, this is the finish you want. Otherwise a properly done Level 4 is plenty.
